Butter Prawn Fried Rice (牛油虾仁炒饭)



Step 1: Prepare Food Ingredients: 4 quarter sliced Luncheon meat, cooked white rice, 4 eggs, 1 whole clove garlic, 7-8 small onions, 20 big tiger prawns, 1/4 butter



Step 2: Dice the Luncheon meat into cubes.



Step 3: Put the Luncheon meat cubes in a plate.



Step 4: Chopped garlic, small onions. Remove and clean the prawns' black vein, slice prawns into halves. Cut butter into small sections. Put every ingredients on plates to prepare for stove cooking. Beat the eggs in a big bowl to prepare for scrambled eggs.



Step 5: Put one small section of butter into saucepan. Melt the butter over stove.



Step 6: Pour the beaten egg liquid into the saucepan. While bubble heats up on a semi-cooked mode, use spatula to quickly scrap through the eggs on the surface of the saucepan. Do not allow the eggs to cook thoroughly, otherwise, it becomes omelette instead of scrambled eggs texture. Scrambled eggs should be wet on the texture. Remove from saucepan and place on plate to avoid overcooking. 


Step 7: Heat up some butter sticks. Put the diced luncheon meat in the saucepan and fry till slightly golden brown. 


Step 8:  Fry till slightly golden brown on the surface of the diced luncheon meat. Remove from saucepan and place on plate.



Step 9:  Heat up some butter sticks again.


Step 10:  Pour the prepared prawns into the saucepan while butter oil is sizzling.




Step 11:  For areas of the prawns that are uncooked, use a tong to flip and turn the prawns over for continual of cooking. When cooked, the flesh of the prawn meat should look orange and pale white in color, not translucent.



Step 12:  When thoroughly cooked, remove the cooked prawns from the heated saucepan to the bowl.



Step 13:  Should look like this. This is cooked prawns. 



Step 14:  Pre-cooked white rice. 



Step 15:  Loosen beforehand the white rice to avoid lumps and heat evenly spread when cooking on stove.



Step 16:  Stir fry chopped garlic in a pre-heated buttered saucepan.



Step 17:  Stir fry add-on chopped small onions together with the garlic in the saucepan.



Step 18:  Add in cooked white rice. Continue to stir fry together with chopped garlic and small onions.




Step 19:  Mix well the rice with chopped garlic and small onions together evenly.



Step 20:  Add in cooked diced luncheon meat. Mix well with the rest of the cooked ingredients in the saucepan.



Step 21:  Check the stove fire. Make sure it is medium heat fire to maintain the momentum of cooking, and avoid burnt food from overheating.



Step 22:  Flip and turn any areas of the food which you find uncooked in the saucepan to make sure heat is evenly spread to cook all ingredients.



Step 23:  Add in cooked prawns and cooked scrambled eggs to the saucepan. Mix well all ingredients in the saucepan.



Step 24:  Cover the saucepan lid over the pan. And wait for a few minutes to simmer the overall food ingredients in the saucepan to add more flavor and taste.



Step 25:  It's cooked. Switch off the stove fire.



Step 26:  Prepare a large bowl. Transfer Butter Prawn Fried Rice over to the large bowl for servings.


Step 27:  Ready to eat.
