The Story begins with....

Left with 2 overdue apples, no one is going to eat in the house for weeks. Oh my god. I am going to make you eat the apples.

To begin with, please prepare the ingredients. The ingredients needed for Apple Crumble Pie are as follow:

Also, prepare your table top scale to get the ingredients portion measurement correct at the start.


Place a container on the scale. Tare to 0 setting with the container on the scale to begin accurate measuring process, which means minus the container weight on the scale as shown.




Measure up to 170 grams of castor sugar. This is the actual amount of sugar used for original English recipe for Apple Crumble Pie.

For diabetes-prone people or family members who prefer less sugar, please reduce the castor sugar amount to half, from 85-100 grams.


Put aside your castor sugar. Prepare another empty clean container on the scale. Tare to 0 to minus the container weight. Prepare self-raising flour.


Put self-raising flour into container. Measure up to 280 grams of self-raising flour for use. Put aside your self-raising flour.


Place a clean plate on top of the scale. Tare to 0 to take away the weight of the plate. Cut the butter and place on the scale, measuring up to 170 grams of butter for use.


Prepare 1 pie pan for baking. Choose 1 type either the one-time use or reusable pie pan bakeware.


Prepare a large clean bowl to be used for dough kneading. Pour the self-raising flour into the large bowl after sieving the flour.


Alternatively, you can pour the whole amount of flour straight into the bowl as follow.



Wash your hands clean before you begin kneading the dough with butter with your finger tips. Try to make the dough into bread crumbs, or at least look like bread crumbs, so to speak.


Add in sugar at intervals while you knead the dough with your bare hands to blend the sweetness into the dough while you work on it, leaving only (1/3) one-third of the sugar remaining amount reserve for later use, if you desire a burnt texture on top of the Apple Crumble Pie. This is optional: If you like cinnamon, add in the cinnamon powder at this stage while kneading the dough. For now, in this recipe, I will stick to plain Apple Crumble Pie recipe.


Prepare your cutting board and knife. Fruit and vegetable peeler will quicken your skin peeling process if you preferred to use.



After shaving off all apple skin, cut the each apple into 6 portion slices. Clean your cut apples in water before use for baking.


Gather all your necessary kitchen equipment and prepared food ingredient at this stage to prepare the next layout stage of the Apple Crumble Pie into the pan. Oil the pie pan with butter or margarine if you preferred. In my case, I am reducing oil consumption, so I do away with extra butter or margarine oil, afterall, I am using a non-stick bakeware.


Your washed apples.


Your kneaded dough.



Your leftover sugar, one-third of the remaining portion.


Pour some of the sugar into the pan.


Layout the sliced apples into the pie pan. Spread evenly the cut apples.


Now, as for the dough, we want to achieve a crumble texture on the apple pie, so the texture make it as much as bread crumbs texture on the surface as possible.



Work with you fingers. Use your finger tips to achieve a crumble texture dough layout on the top of the apples.


It will look like that.


Scatter evenly all the remaining sugar over the top of the dough. Spread out evenly. It's difficult for me to shoot photo and single-handedly show the correct actual step, as much as I want. Haha. It's one-man show most of the time, cameraman-videographer-baker all-in-one.


Put your Apple Crumble Pie in the pre-heated oven at 180°C / 350°F Gas Mark 5 for 40 minutes. It's important to pre-heat your baking oven at least 10 minutes beforehand. 



 

There you go. Put your Apple Crumble Pie inside the pre-heated oven at 180°C / 350°F Gas Mark 5 for 40 minutes.


It is 11am as the timer starts to cook the Apple Crumble Pie in the oven. 40 minutes on your radar to watch out your Apple Pie in the oven. You can turn your Apple Crumble Pie on the other side of the tray to prevent over burning in-between cooking. Monitor the heat and the texture while cooking in the oven and make oven heat adjustment accordingly because everyone's home baking oven from different manufacturer will have some difference in performing the baking process.


I adjusted my oven heat to 100°C Gas Mark 5 for 40 minutes. It's overheating if I follow the book recipe accordingly.


Now, a bit over burnt on the top texture. It's alright though, the sugar concentrated in the center contributed to the factor. Therefore, I said spreading the leftover sugar evenly across the dough is important.

Peach Crumble Pie

I am twisting the recipe to another version. Making the peach version instead of the apple version. Same step, same procedure, except now I am going to change the pie pan to cupcake pan, the large-cupcake-holes-bakeware-pan.

Prepare all the ingredients the same way as abovementioned for Apple Crumble Pie, except change the apples to peach.




My peaches sit on the altar for 2 weeks. The fruits begin to over ripen too much. Nobody at home is eating the bought peaches. Either I cook the peaches and make it to something desirable my family members will consume or I throw away the over-ripe peaches in a few days time.


So, I decide to tweak to Peach Crumble Pie. You see one, peach is over ripening. So difficult to cut it to keep it to good shape.


Pre-prepare the dough with self-raising flour and butter. Knead and ready-to-use.



Layout the cupcake liners into the bakeware. Put the sliced peaches into each slot. Adjust accordingly how much fruit you want on each cupcake slot.


Cut into smaller bits on the fruit.


The final layout look like that. You can actually first put in small amount of dough on each cupcake slot, then add-in the cut peaches to sandwich in-between the dough instead of my way below. It will end up too thick a dough on top, too watery at the bottom of each cupcake slot. Cupcake liners will tear. Therefore, here, I use 2-layers of cupcake liners for each slot.


Now, cover your cut peaches with crumbled dough in each slot.


The layout look like this before putting into oven to cook.


Pre-heat your oven again at 180°C / 350°F Gas Mark 5 for 10 minutes, if your oven has cooled down after the first bake.



Due to the smaller bite-sized portion, the oven doesn't need too much high heat to cook the dough. I have adjusted to 100°C to cook for 30-40 minutes. Please monitor along when you start cooking in the oven. Adjust the heat and timer accordingly. Again, everyone's home baking oven has difference in performing the cooking process.

The Apple Crumble Pie Serving

My boys like the Apple Crumble Pie to be served with Ice Cream topping as add-on.



You can also use Yogurt to replace Ice Cream as topping, if you preferred less sweet, and a sour taste to replace too much sugar on the taste bud. My boys like Meji Yogurt. I prefer the Greek plain yogurt which will help me dilute the too-sweet Apple Crumble Pie taste.


This is the Peach Crumble Pie my eldest son took a photograph of before eating. He commented the peaches are overly ripened. Haha, purposely, as expected.

INGREDIENTS
The ingredients below will make a medium sized apple crumble enough for four people.

Ingredients
3 medium cooking apples
Granulated sugar: 170 grams ( 6 oz)
Butter or cooking margarine: 170 grams ( 6 oz)
Self-raising flour: 280 grams ( 10 oz)

OPTIONAL INGREDIENTS
3/4 teaspoon cinnamon
1/2 cup rolled oats or corn flakes (most breakfast cereals will do)

COOKING EQUIPMENT
1 medium-sized oven-proof dish
Scales
Fork

Notes for the Cook!
When apples are peeled and especially when sliced, their attractive white flesh will very quickly turn a not-so-attractive brownish colour. This makes absolutely no difference to the taste, but looks are important. The method described below therefore leaves the peeling and cutting of apples to the last minute.

There is one trick described at the end to make the crumble surface look really brown and nice, but please do keep an eye on the timing. A brown crumbly topping looks absolutely delicious, but a black and burnt top is not so good.

METHOD
Turn your oven on now so that it's pre-heated ready to cook later on! Heat settings are 180°C / 350°F / Gas Mark 5.

Now, make the crumble mixture. I've tried this with my hands, an electric blender and a fork. I think a fork is beat but the experts prefer hands!

Mix the butter/margarine with the flour in a dry bowl using a fork until you have a texture like breadcrumbs. It's not important that every single bit is like breadcrumbs, but try and get most of it like that. This will take about three minutes. If you are adding the optional ingredients of oatmeal or Corn Flakes, do it now. Mix it all in well.

Add 4 (not all the 6) ounces of sugar to the mixture and mix it all together with the fork. This will tend to make the mixture even more like breadcrumbs. That's your crumble mixture made and ready.

Peel the apples and cut one into four parts. Cut out the core from each of the sections.

Slice the apple quarters – no need to slice them too thinly, about six slices per quarter section of apple will do just fine.

Put the apple slices into the casserole dish. If you are adding the optional cinnamon, do it now. Make sure it is sprinkled evenly throughly the apples. Sprinkle the remaining 2 ounce of sugar evenly over the apples.

Now, evenly spread the crumble mixture over the sugared apples.

Put this into the middle of your pre-heated oven at 180°C / 350°F / Gas Mark 5 for 40 minutes.

One trick you can use now is to put the apple crumble under hot grill for about 30 minutes to brown the crumbles topping.
Keep a good eye on it though because 30 seconds too much can result in a very black crumble topping!

When the crumble is cooked, leave it to cool for at least 15 minutes. 

Beware, apple crumble can stay really hot for an hour or so.

Serve hot or cold with ice cream, cream or custard.

If there is any apple crumble left over, cover the dish with tin foil and it will keep in the fridge for a couple of days.
