 Ultimate Macaroni and Cheese

Step 1: Prepare all ingredients to begin. 10 cloves of garlic, 45g butter, 3 heaped tablespoon plain flour, 1 litre milk, 600 dried macaroni, 8 tomatoes, butterhead lettuce, 150g Cheddar Cheese, 100g Parmesan Cheese, 2 slices of bacon, 1 big chef onion, Mustard, Worchester sauce, Mango Chutney (optional), 3 big handfuls of fresh breadcrumbs, olive oil.




Step 2: To begin, chop garlic and parsley into bits. Slice chef onion into pieces. The hack is to smash the garlic first to remove outer skin quickly, then slice and chop into bits.

Step 3: Gather all prepared ingredients together to begin cooking.

Step 4: Stir and cook the macaroni or pasta in hot boiling water. Collect 1 litre of starchy pasta boiling water for use later. Side aside.


Step 5: Drain the hot macaroni with cold tap water. Set aside.

Step 6: Prepare all these cooking ingredients near the stove, ie, milk, butter, flour, onion. Slice 1/10 of the butter amount for pan-frying. Turn the stove fire to medium heat. Melt the butter in frying pan. Stir fry the onion together. Put in 3 heaped tablespoon of flour to absorb onion moisture. Add in 1 litre of milk bit by bit to stir cook the onion slices in the pan. Cover the pan with lid to simmer.

Step 7: While still cooking, stir the thickened mixture to avoid sticking to the pan. Pour into the pan the earlier saved pasta water to reduce the stickiness of the thickened mixture. Add in grated cheese 2/3 of the overall prepared amount. Save 1/3 of the remaining grated cheese for the topping before putting into oven to bake. Add in 1 teaspoon of Mango Chutney for better flavor.


Step 8: Pour the macaroni or pasta into the mixture. Continue cooking. Stir and mix. Add Mustard. Add Worcester sauce.

Step 9: Transfer cooked macaroni into earthern bakeware or tin pie pan. Sprinkle the remaining grated cheese as topping on each bakeware. 

Step 10: Pop into the oven to start baking at 200°C for 40 minutes after pre-heat the oven for 10 minutes.

Step 11: Fry the 2 slices of bacon till golden brown. Cut into small bits. Set aside for use later. Oil the frying pan after cleaning with clear water. Stir fry the chopped garlic. Pour in 3 handfuls of breadcrumbs. Stir fry the breadcrumbs till golden brown. Add in cooked bacon bits and chopped parsley. Mix and stir fry to achieve an even browning.





Step 12: Ready to serve. Cheers!
